200 grams of oat flour
35 grams of cacoa powder
50 grams of sugar
½ teaspoon sea salt
6 egg yolk
4 egg whites
2 vanilla stick (inside)
6 tablespoons olive oil
4 egg whites with half vanilla beaten stiff. Beat 6 egg yolk and sugar *bain de marie, until all ingredients are added, add the remaining vanilla and mix, add olive oil and mix, add oat flour, sea salt and mix, add cacoa powder and mix, add the stiffly beaten egg white and mix well. Pour the dough into a baking tin greased with olive oil. Bake in a preheated oven for 90 minutes (first 60 minutes at 140 degrees Celsius, then 30 minutes at 100 degrees Celsius). This depends on the type of oven. Use a skewer to check whether the dough is cooked. The skewer should be dry. Take the cake out of the oven.
Crème
Boil 150 grams of sugar and 1 cup of water until syrupy, beat 2 egg whites until stiff, than pour in the warm sugar syrup while beating the stiff egg whites. Add 1 vanilla stick (inside), 30 grams of cacoa powder and 1 to 3 tablespoons of orange juice, mix everything and the cream is ready. Let the cream stand for a while until it has cooled. Spread the cacoa cream on the cooled cake.
