200 grams of oat flour
½ teaspoon sea salt
2 teaspoons cinnamon powder
½ lemon peel grated
1 ½ cup water (+ / – 150 ml)
4 tablespoons pure honey
Firstmix the oat flour, salt and cinnamon, then add the lemon peel and water and mix with a spoon to a smooth firm dough. Spread a little olive oil on a baking tray. Place the dough in 4 to 6 flat 2 cm thick round forms. Bake in a preheated oven at 140 °C for around 30 minutes. Use a skewer to check whether the cakes are done –the skewer will be dry, the cakes will be brown and loose from the baking tray. Serve with 4 tablespoons of pure honey and sprinkle cinnamon on top.
