250 grams cream butter
Take a small pan and put the cream butter in it. Take a slightly larger pan and put 2 cups of water in it. Place the pan with butter in the pan with water and heat the water over low heat. * Bain de marie. The butter and milk protein separate from each other, this happens very quickly +/- 10 minutes. When the butter has melted completely, turn off the heat. The milk protein may float to the surface (scoop it away) or sink to the bottom. Pour the liquid butter into a glass jar or bowl. The Clarified Butter or Ghee is ready for use.
